Mustard Balsamic Vinaigrette on Spinach

A trending vinegar, balsamic vinegar marries well with mustard to create this delicious, unique salad.

Prep time: 10 minutes Serves: 2 (1 1/2 cups / 375 ml/serving)

Ingredients

Dressing

  • 3 tbsp / 45 ml balsamic vinegar
  • 3 tbsp / 45 ml olive oil
  • 1 tbsp / 15 ml honey
  • 1 tbsp / 15 ml old-style prepared mustard
  • 1 clove garlic, minced

Salad

  • 2 cups / 500 ml baby spinach
  • 1/4 cup / 60 ml halved cherry tomatoes
  • 1/4 cup / 60 ml chopped walnuts
  • 1/4 cup / 60 ml dried cranberries
  • 1 egg, hardboiled and sliced
  • 1/4 cup / 60 ml shredded mozzarella cheese
  • 1 chicken breast, grilled and sliced (optional)

Instructions

  1. Dressing: Whisk together vinegar, oil, honey, mustard and garlic. Let stand.
  2. Salad: In bowl, layer spinach, tomatoes, walnuts, cranberries and egg. Top with mozzarella (and chicken, if desired).
  3. Drizzle dressing over salad just prior to serving.
