Seed Bread

This hearty bread is nicest served warm, but it is also very nice toasted.

Serves: 16

Ingredients

  • 1 large egg
  • 1 cup (250 ml) 1% buttermilk
  • 1/4 cup (60 ml) canola oil
  • 2 tbsp (25 ml) prepared mustard
  • 1 cup (250 ml) all purpose flour
  • 1 cup (250 ml) whole wheat flour
  • 1/2 cup (125 ml) brown sugar
  • 1/3 cup (75 ml) finely chopped nuts (your favourite)
  • 1 large carrot, grated
  • 3 tbsp (45 ml) whole mustard seed
  • 2 tbsp (25 ml) whole flax seed
  • 2 tbsp (25 ml) sunflower seed
  • 2 tbsp (25 ml) poppy seed
  • 1 tsp (5 ml) baking powder
  • 1 tsp (5 ml) baking soda
  • 1/2 tsp (2 ml) salt

Instructions

  1. Preheat oven to 350º F (180º C).
  2. In a large mixing bowl, combine egg, buttermilk, oil and mustard and mix well.
  3. In another bowl, mix all remaining ingredients. Add dry ingredients to wet, mixing until moistened.
  4. Spray a 9 inch x 5 inch (23 cm x 13 cm) loaf pan with non-stick cooking spray.
  5. Turn mixture into loaf pan and bake 50 to 60 minutes or until a toothpick inserted in centre comes out clean.
  6. Cool 10 minutes before removing from pan.
  7. Cool slightly on rack then slice into 16 slices.
