Delicious Hummus

This chickpea-based dip, easy to prepare and delightfully delicious, makes a very enjoyable snack.

Prep time: 10 minutes Makes: 2 cups (500 ml) Serves: 35 (1 tbsp / 15 ml/serving)

Ingredients

  • 1 – 19 oz / 540 ml can chickpeas, drained and rinsed
  • 2 tbsp / 25 ml tahini paste
  • 3 sprigs parsley
  • 1/2 tsp / 2 ml cumin
  • 1/2 tsp / 2ml salt
  • 3 cloves garlic, peeled
  • 1/2 cup / 125 ml olive oil
  • 2 heaping tbsp / 25 ml+ whole grain Dijon mustard

Instructions

  1. Add chickpeas, tahini paste, parsley, cumin, salt, garlic, oil and mustard to a food processor. Process on high until smooth.
  2. Refrigerate for up to 1 week.
  3. Serve with crackers, raw vegetables or bread.
